Brandt Beef Tuscan Style Cowboy Rib Chops (serves 4)
Ingredients:
-- 4 - 1 1/2 inch thick Brandt All-Natural cowboy rib chops
-- 1/4 cup olive oil
-- 1/4 cup minced garlic
-- 4 teaspoons kosher salt
-- 2 teaspoons fresh ground pepper
-- 2 teaspoons fresh rosemary leaves, minced
-- 3 tablespoons fresh lemon juice

Cooking Instructions: Preheat your gas grill to high, leaving one burner off. Brush steaks with olive oil and season with the garlic, rosemary, salt and pepper. Then, grill the steaks over direct heat until they are well marked, about two minutes per side. Move the steaks to the cooler part of the grill, close the top, and continue to cook for another six minutes on each side for medium-rare. Drizzle steaks with the remaining olive oil and sprinkle with lemon juice. Let the steaks rest for eight to 10 minutes, then serve.
