Opening Session Speakers:
Paul Saginaw, Co-Founder and CSO of Zingerman’s Community of Business will kick off the conference with his presentation, A View from Above: The Concept of Open Book Management & Workplace Culture. In this lively TED-style presentation, Saginaw will discuss financial management and its impact on the Zingerman’s Community of Businesses.

Known for his expertise in assisting multi-unit restaurants create successful catering channel revenues, Erle Dardick, the CEO & Founder of Monkey Group will then take the stage for his presentation, Future Vision: The Off-Premise Paradigm Shift, to discuss how on-demand technology, third party delivery services, call centers, and logistics companies are impacting the ever-changing foodservice industry.

Sean Sherman, founder of The Sioux Chef and the charitable organization NATIFS.org, has revitalized and created awareness of indigenous foods systems within a modern culinary context. Sherman’s presentation, Ancestral Experiences & Indigenous Flavors: Native American Cooking, will examine the lack of Native American restaurants in the United States considering North America’s history began with indigenous ancestors. The James Beard award winning author, caterer and restaurateur will tackle this conversation and how its important indigenous culinary culture is often inaccessible.
