Watson Demonstrates the Use of Edible Glitter as an Inclusion in Frostings and Fillings

Watson will be showcasing samples of sandwich cookies made with Edible GlitterTM as an inclusion in the cookie filling during the Institute of Food Technologists (IFT) Food Expo in Chicago.  The Expo will be held July 16th through the 18th and is one of the largest events in the industry; it brings together professionals from all segments of the food industry.

The cookie Watson will be showing at the IFT contains a multicolored blend of flakes in the filling of the cookie.  Watson can produce Edible GlitterTM flakes using FD&C, EU, or plant-based colors for clean label applications. 

Edible GlitterTM flakes are made from gum Arabic.  Also called Gum Acacia, Gum Arabic is the dried, gummy exudate from stems and branches of trees of various species of the genus Acacia, family Leguminosae. It is used in many food applications, including beverages, frostings, dairy products, candies, and snack foods. The Acacia tree, which is native to semi-desert regions of sub-Saharan Africa, is of great economic importance to that region. The exudate is harvested by local farmers, and is widely recognized as an export success story.  It’s a growing business, as gum Arabic has been embraced by the food and beverage industry as a natural, clean-label ingredient.
